Fish is fried, then stewed with soy sauce, escallions, and ketchup to make a savory Jamaican meal.
INGREDIENTS :
- 2 lb. large fish (snapper, king fish, jack)
- 1 medium onion
- Salt & Pepper
- 2 tablespoon soy sauce
- 2 blades of escallion
- sprigs of thyme
- 1 tablespoon butter
- water
- 1 tablespoon flour
- oil for frying
- 2 tablespoon ketchup

METHOD:
- Fry Fish lightly.
- Sauté sliced seasonings in oil or butter. Then add soy sauce
- Slowly add flour to mixture.
- Cook till brown.
- Add water, ketchup.
- Add pepper & salt to taste.
- Put the fish in a deep pot.
- Pour on the sauce.
- Simmer for 15 minutes.
