Ingredients:
- 4 ozs Butter or Margarine
- 2 large Eggs
- ½ cup Sugar
- 1 cup Raisins (optional)
- 2 tbsp. Instant Coffee
- 1 tsp. Salt
- ½ cup strongly brewed Jamaican Blue Mountain Coffee
- 2 tbsps. Yeast
- 1 cup Milk
Method:
- Grease and flour big bread pan.Melt yeast in ½ cup of warm water.
- Melt butter and scald milk, add butter, milk, sugar with salt.

- Cool and add eggs.
- Ensure you cool the coffee, and then add to the mixture above.
- Add raisins. Mix with yeast mixture.
- Gradually add flour.
- Lay flour on a board and knead dough for a minimum of 5 minutes.
- Put in greased bowl and allow it to rise for an hour or until it doubles

- Hit down and place into breadpan.
- Bake at 350°C for 40 mins or until done and golden in colour.
