Our Stuffed Cucumbers Caribbean Recipe from Grenadine and St. Vincent is easy to prepare. It is fun finger food for a party.
INGREDIENTS:
- 2 cucumbers
- 2 hard-boiled egg, chopped
- 4 ozs chopped ham
- 4 tablespoons mayonnaise
- 1 teaspoon grated onion
- 1 shredded carrot
- pepper
Directions:
1. Remove ends from cleaned cucumbers. Scoop out seeds.
2. Mix remaining ingredients and blend well.
3. Stuff cucumbers, wrap and place in refrigerator until chilled.
4. Serve sliced.
