Jamaica is blessed with a great variety of seafood, including snapper, grouper, and kingfish, and when these fish are “escovitched,” they become unbelievably delicious. The escovitch method involves marinating the fish in onions, spices and vinegar, which preserves the flavor of the fresh ocean fish The longer the marinating period, the better, of course. Escovitche-style fish has been described as a very fresh seafood cocktail – with a distinctive Jamaican style.
