Learn how to make a light and tasty fish soup, with the help of Gourmand award Caribbean cookbook author Chris De La Rosa. Join Chris as he shows his step by step method of making a gluten free fish soup, with the head of a halibut and cubes of fresh Cod. Seasoned with Caribbean herbs, the fish broth is very light but very packed with flavor. This recipe is based on a traditional fish soup in Trinidad and Tobago called fish broth.
For making this fish soup you’ll need…
1 fish head (I used a hilbut)
2 cups cubed cod
1/2 large onion
3 scallions
2 tablespoon chopped cilantro
1 whole scotch bonnet pepper
8-10 cups water
2 fish stock cubs
1/4 teaspoon black pepper
1 tablespoon veg oil
1 large potato
1/2 lime (juice)
2 cloves garlic
3 sprigs thyme
1 stalk celery
2 cups cubed pumpkin
small bunch watercress (thick stems removed)
* If making this gluten free, do go through the entire list of ingredients to ensure it meets with your specific gluten free dietary needs. (especially the fish stock cube).
*Taste for salt and adjust accordingly.
