Ingredients

  • Peanut or canola oil, for frying
  • 6 ripe bananas  (mashed)
  • 4 tablespoons shredded coconut
  • 2 cups coconut milk,
  • 1 cup all-purpose flour,
  • 1 tsp cinnamon,
  • 2 tbsps caster sugar.
  • 1teaspoon baking powder
  • 14 teaspoon pure vanilla extract

Method:

  • Combine and Mix all the ingredients
  • Whisk until smooth & rest for 30 mins
  • Heat Peanut or canola oil in a medium saucepan over medium heat to 180ºC
  • Dip a large serving spoon in the hot oil
  • Using the spoon scoop the mixture and place in the hot oil
  • Cook for 2-3 minutes on each side or until golden
  • Transfer to a plate lined with paper towel
  • Repeat with the rest of the mixture.  Serve hot
