Ingredients
- Peanut or canola oil, for frying
- 6 ripe bananas (mashed)
- 4 tablespoons shredded coconut
- 2 cups coconut milk,
- 1 cup all-purpose flour,
- 1 tsp cinnamon,
- 2 tbsps caster sugar.
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon pure vanilla extract
Method:
- Combine and Mix all the ingredients
- Whisk until smooth & rest for 30 mins
- Heat Peanut or canola oil in a medium saucepan over medium heat to 180ºC
- Dip a large serving spoon in the hot oil
- Using the spoon scoop the mixture and place in the hot oil
- Cook for 2-3 minutes on each side or until golden
- Transfer to a plate lined with paper towel
- Repeat with the rest of the mixture. Serve hot
